I've had a wonderful but tough journey loosing weight but not an easy journey eating LOW CARB.....this is a journey I will probably be on for the rest of my life. I have found so many tasty and amazing recipes I wanted to share with my friends and fellow Low Carbers. CAULIFLOWER RICE SUSHI ROLLS
I love sushi rolls and Korean kimbab rolls. In low carb white rice is off limits. I really missed eating these tasty seaweed delights dipped on soy sauce. THERE IS ALWAYS A WAY LOW CARBING!
I boiled a whole head of cauliflower in salted water until soft.
-Drain the cauliflower well and mash until the texture of rice.
Making the fillings:
-Make 3 eggs into an omelette and slice in thin strips.
-Slice cucumber in thin strips.
-Slice carrots in juliene strips and cook in a bit of butter until soft.
-You could use thinly sliced cooked chicken or beef strips, tuna or salmon.
Lay a sheet of seaweed on a flat surface and spread the cauliflower rice onto it, arrange the filling in a line on the cauliflower. Roll up and slice in circles with a sharp edged knife.
Serve with soy sauce for a dipping sauce.

BEEF EGG CASSEROLE
1/2 kg ground meat
1 cup sliced mushrooms
1 cup grated cheese
1 cup onion chopped
1 cup green or red pepper chopped
1/2 cup cream
8 eggs beaten
1t mustard
salt and pepper to taste
-Cook and crumble meat
-Add pepper, onion and mushroom cook through
-Drain mixture
-In a bowl add 1/2 of cheese to the mixture
-Add eggs
-Pour into baking dish
-Sprinkle with cheese
-Bake 40 minutes at 180dC

1 1/2 cup grated cheese

bacon or spicy sausage chopped and fried
1 cup tinned/chopped tomatoes drained
1/2 small onion chopped
2 large pickles chopped
big lettuce leafs
-Brown beef add the rest of ingredients stir well
-Turn food onto big serving platter and top with the leftover 1/2 cup of cheese
-Serve a spoonful onto lettuce leafs, fold and eat.
This is a bit of a messy meal but the kids love it. I place the platter in the middle of the table and people spoon onto their leafs as they eat. Big fun!

-Cook beef on stove top until brown, add salt and pepper
-Mix through and add cheese

ALFREDO BEEF BROCCOLI
-Brown ground meat
-Add broccoli florets to meat and cook until soft
-Stir in cream cheese
-Serve over cauliflower rice (look at recipes for vegetables)
