I've had a wonderful but tough journey loosing weight but not an easy journey eating LOW CARB.....this is a journey I will probably be on for the rest of my life. CAULIFLOWER RICE SUSHI ROLLS
I love sushi rolls and Korean kimbab rolls. In low carb white rice is off limits. I really missed eating these tasty seaweed delights dipped on soy sauce. THERE IS ALWAYS A WAY LOW CARBING!
I boiled a whole head of cauliflower in salted water until soft.
-Drain the cauliflower well and mash until the texture of rice.
Making the fillings:
-Make 3 eggs into an omelette and slice in thin strips.
-Slice cucumber in thin strips.
-Slice carrots in juliene strips and cook in a bit of butter until soft.
-You could use thinly sliced cooked chicken or beef strips, tuna or salmon.
Lay a sheet of seaweed on a flat surface and spread the cauliflower rice onto it, arrange the filling in a line on the cauliflower. Roll up and slice in circles with a sharp edged knife.
Serve with soy sauce for a dipping sauce.

STIR FRY CHICKEN AND BROCCOLI
3T olive oil
3 chicken breasts cubed
2 cloves garlic crushed
3 cups broccoli florets chopped
1t grated ginger
2t soy sauce
salt and pepper
-Heat olive oil and fry chicken cubes
-Add garlic and broccoli
-Add ginger, soy sauce and rest of ingredients
-Cook through

CHICKEN MUFFINS
3 cups ground chicken meat
1 onion finely chopped
1 egg beaten
3 cloves garlic crushed
1 cup cream
3/4 cup cheese
2T butter
salt and pepper
-Mix chicken, egg and onion
-Scoop into muffin tin holes
-Bake for 15 minutes at 180dC
-Remove from oven
-Mix cream cheese, cream and garlic
-Scoop over chicken muffins and bake in the oven for another 20 minutes

LEMON CHICKEN
-4 chicken breasts beaten with a meat hammer or the side of a plate till flattened
-Squeeze juice of 2 lemons on and grate a bit of lemon zest on top of each chicken breast salt and pepper
-In the olive oil fry 2T red pepper, 1T of chopped onion, crushed garlic salt and pepper
-Pack the chicken breast in an oven dish, top with the pepper mixture
-Bake covered for 25 minutes at 180dC
-Uncover and bake for another 10 minutes
-Squeeze juice of 2 lemons on and grate a bit of lemon zest on top of each chicken breast salt and pepper

raw chicken strips
red and green pepper strips
2T peanut or sesame oil
1/2 red onion diced
1 cup diced mushrooms
1T minced garlic
2T chopped cilantro
1/2 cup green onions finely chopped
big lettuce leafs for wraps
-Fry chicken in oil add peppers, onion, garlic and mushrooms fry for a few minutes more
-Add the rest of the ingredients and serve wrapped in lettuce leafs

DIET PEPSI CHICKEN
-Salt and pepper chicken pieces
-Place chicken pieces skin down in baking dish
-Pour one can of diet pepsi over chicken into baking dish
-Bake for 40 minutes, turn over and bake for another 20 minutes, add a bit of water if it has cooked dry.
-Serve on top of cauliflower rice

CABBAGE PASTA PEANUT CHICKEN
chicken strips
1/2 cup chicken broth
1 1/2 T minced ginger root
3T peanut butter
3T soy sauce
garlic to taste
1 head cabbage sliced into thin strips
1/2 cup chopped green onion
1/4 cup chopped peanuts
-Fry chicken strips in a bit of olive oil until cooked through
-Add ginger, peanut butter, garlic and cabbage cook until cabbage is soft and wilted
-Add the chicken broth and simmer on low for 5 minutes
-Add the green onion and garnish with chopped peanuts
-Serve
