I've had a wonderful but tough journey loosing weight but not an easy journey eating LOW CARB.....this is a journey I will probably be on for the rest of my life. I have found so many tasty and amazing recipes I wanted to share with my friends and fellow Low Carbers. LAYERED SALAD


Layers:  chopped cabbage, dressed with a mixture of mayonnaise and a touch of vinegar, next layer is grated cheese, one green pepper and one red pepper cubed, finely chopped cauliflower, red onion chopped, bacon (I used a spicy sausage as bacon do not exist where I live). Topped off with pieces of chicken. I added a sprinkle of green onion for a bit of extra color.

This was one delicious salad. Enough to feed a crowd.

CAULIFLOWER CRANBERRY SALAD

Make 3 cups cauliflower rice raw
2T dried cranberries
1/2 cucumber diced about 3 cups
3T feta cheese crumbles
2T balsamic vinegar
1T olive oil
salt and pepper

-Toss and serve


SPINACH SALAD

3 cups spinach leafs broken into bite size pieces
1/2 medium red cabbage shredded
2 bell peppers chopped
1T balsamic vinegar
1T olive oil
2T pumpkin seeds
salt and pepper

-Toss and serve

SPINACH BERRY SALAD

3 cups baby spinach broken into bite size pieces
1 cup berries sliced (you could use blue berries, raspberries, strawberries or even dried cran berries)
3/4 cup crumbled feta cheese
1 cup chopped tomatoes
2T chopped green onion
1/2 cup walnuts

DRESSING:
1T olive oil
1T balsamic vinegar

-Mix dressing well and pour over salad.

GREEN CRUNCH CABBAGE SLAW

10 to 12 cups shredded cabbage
1 cucumber peeled into thin strips
1 green pepper sliced into thin strips
2T chopped green onion
2T chopped fresh basil
1/4t red pepper flakes
2 garlic cloves crushed
3T apple sider vinegar
2T olive oil
salt and pepper to taste

-Toss and serve

ANTI PASTA CAULIFLOWER SALAD

2 cups raw cauliflower chopped
1 cup red cabbage finely sliced
fresh basil chopped
1/2 cup parmesan cheese
3T marinated sun dried tomatoes snipped
3T chopped black olives
1 clove garlic minced
3T balsamic vinegar
3T olive oil
salt and pepper

-Mix well and serve.

CABBAGE SALAD

3 cups shredded green cabbage
1 cup shredded red cabbage
1T orange zest

-Mix well

DRESSING:
2T balsamic vinegar
1T grated ginger
1T sesame oil
1/4 cup lemon juice
1T olive oil

-Mix well
-Pour over salad and serve.

TUNA AVO SALAD

1 can tuna
1 avocado
1/4 cup mayonnaise
1/4 cup chopped pickles
1/4 cup minced onion
1/4 cup snipped chives
1/4 chopped tomatoes
1 celery stalk finely chopped
1 egg boiled and sliced
salt and pepper
1T lemon juice

-Mix well in a bowl and serve on top of lettuce leafs or fold it into lettuce leafs like wraps.

GREEK CAULIFLOWER SALAD

1 small head cauliflower
4 tomatoes diced
3 cups cucumber diced
1/2 cup pitted olive pieces
1/2 cup feta cheese crumbled
1/2 cup diced red onion
1/2 cup olive oil
2T balsamic vinegar
1 clove garlic minced
salt and pepper to taste
1 lemons juice

-Lightly steam or boil cauliflower pieces
-Drain and add the other ingredients
-Mix well and serve
-This salad is actually better the next day.

ASIAN CAULIFLOWER SALAD

2 cups grated raw cauliflower
1/4 cup chopped green onion
1/2 cup thinly sliced red pepper
1 cup sliced raw mushrooms
1/4 cup grated carrots
cilantro
1/4 cup chopped peanuts
1/4 cup peanut butter
1T soy sauce
1T BBQ sauce (I make a mixture of equal parts soy sauce, worcester sauce and ketchup) then you can leave out the 1T soy sauce

-Mix together in a bowl and garnish with chopped peanuts

CAULIFLOWER POTATO MOCK SALAD

This is my family's favorite salad they prefer it above regular potato salad!

1 head cauliflower about 4 cups loosely packed
1 small red onion chopped
parsley and green onion snipped
2 eggs boiled and chopped (I often leave this out)
3 pickles chopped into little pieces
1T mustard
mayonnaise
salt
pepper
2T lemon juice

-Steam or boil the cauliflower - drain
-Mix the mayonnaise and mustard well
-Add all the ingredients to a bowl and stir well

This could be served warm or cold

CUCUMBER SALAD

-Cut cucumber into cubes about 2 cups stir in 2T cream cheese, 1T mayonnaise, 1T vinegar, salt and pepper.

HAM OR TURKEY HAM SALAD

1/2 cup chopped ham
1t mustard
1T mayonnaise
pinch of salt and black pepper
1/4 onion diced
1/4 cup chopped ghurkins
1 chopped boiled egg

-Mix well and eat with low carb crackers or wrapped in lettuce leafs.


TUNA WALDORF SALAD

1/2 cup mayonnaise
1T mustard
2 cans tuna
1 green pepper chopped
2T fresh parsley chopped
1 cup walnuts or almonds chopped (you could use less)
black pepper to taste
chopped lettuce

Mix salad ingredients well and serve on top of the chopped lettuce.
