1 can tuna
1 avocado
1/4 cup mayonnaise
1/4 cup chopped pickles
1/4 cup minced onion
1/4 cup snipped chives
1/4 chopped tomatoes
1 celery stalk finely chopped
1 egg boiled and sliced
salt and pepper
1T lemon juice
-Mix well in a bowl and serve on top of lettuce leafs or fold it into lettuce leafs like wraps.
I've had a wonderful but tough journey loosing weight but not an easy journey eating LOW CARB.....this is a journey I will probably be on for the rest of my life. I have found so many tasty and amazing recipes I wanted to share with my friends and fellow Low Carbers. TUNA BURGERS
2 cans tuna drained
1 egg beaten
1/2 cup finely chopped green pepper and onion
2T grated cheese
salt and pepper to taste
-Spray muffin holes or butter.
-Scoop this mixture in muffin holes
-Bake for 25 minutes at 180dC

TUNA FILLING FOR LETTUCE LEAFS
1 can tuna drained
1T mayonnaise
1t mustard
1/2 cups chopped celery
1/4 cup red onion finely chopped
1/4 cup chopped pickles
black pepper to taste
-Mix well and serve wrapped in lettuce leafs.

TUNA WALDORF SALAD
1/2 cup mayonnaise

2 cans tuna
1 green pepper chopped
2T fresh parsley chopped
1 cup walnuts or almonds chopped (you could use less)
black pepper to taste
chopped lettuce
Mix salad ingredients well and serve on top of the chopped lettuce.

TUNA "NOODLE" CASSEROLE
1 large head cauliflower
1 bouillon chicken cube
1/2 cup cream cheese
1/2 cup diced onion
3 cans tuna drained
1 cup cheese
(you could add two cups low carb vegetables to this - Broccoli, red or green pepper, zucchini etc.)
-Chop cauliflower into bits
-Mix all the ingredients in a bowl except the cheese
-Bake for 30 minutes at 180dC
-Top with cheese
-Bake for another 15 minutes until cheese is brown.
